Happy National Sundae Day!

Some people might say that placing National Sundae Day in the middle of November, a time when people are dusting off their winter coats and complaining about early holiday decorations, is incongruous at best. These people are wrong, though, because there's never a wrong time to enjoy the greatest culinary innovation known to humankind.

As you may recall, National Ice Cream Day occurs every third Sunday in July, but National Sundae Day is a totally separate food-themed holiday taking place on Nov. 11 each year. Nobody needs an excuse to eat a sundae, but it certainly doesn't hurt to have a national holiday dedicated to it. It's safe to say the best way to observe this glorious holiday is to make your own sundae. All it takes is some ice cream and whatever toppings your heart desires — usually syrup, nuts, whipped cream, or cherries in some combination.

But ultimately, sundaes are where creativity reigns supreme, and trust me: People can be incredibly inventive. So if you find yourself in need of some inspiration leading up to National Sundae Day, or just feel like feasting your eyes, here are 12 sundaes you absolutely must try before your time on this green Earth is up.

1. Strawberry Shortcake Sundae

This concoction was created at Ivy Chelsea Garden, if you feel like booking a ticket to the United Kingdom on your quest for the perfect sundae.

2. Caramel Mango Sundae

I'll take 12, please. The caramel mango sundae was created by Malo, a restaurant in Des Moines, Iowa.

3. Brownie Sundae

The brownie sundae is a classic for a reason. A sweet, sweet reason.

4. Caramel Apple Pie Sundae

Caramel and apples are just as autumnal as pumpkin spice, even if they don't get the attention they deserve.

5. Chocolate Chip Cookie Dough

Sprinkles may not taste like much, but they elevate any sundae from delicious-looking to adorable.

6. Another Chocolate Brownie Sundae

7. Fried Snickers Sundae
