How To Make Corn Fritters For Mardi Gras

Mardi Gras might go by several names, but one thing is for sure: It prompts the making of some delicious food. If you are like me and love festive food, you will want to make these homemade corn fritters to celebrate. These appetizers are a staple when it comes to both Southern and Mardi Gras recipes. It also does not hurt that they are insanely easy and cheap to make.

Also known as Fat Tuesday, Shrove Tuesday, and Pancake Tuesday, Mardi Gras is a day full of food and celebration. You can only imagine what the night life is like in New Orleans during this time. Unfortunately, since we all cannot drop everything and fly to NOLA, we will have to live vicariously through Mardi Gras party ideas and recipes.

These corn fritters are the best way to start things off. They are sweet, crispy, and the definition of comfort food. And while the Internet is swimming with alternative corn fritter ideas, I decided to take on the most basic kind. It is a no fuss recipe that will speak to your foodie soul.

To give your taste buds the full experience, whip up another dish or two. Dirty rice, gumbo, and Mardi Gras king cake are all awesome options. And for the love of all things tasty, please do not forget the Mardi Gras cocktails.

Ingredients:

  • 1 can corn (8.5 ounces)
  • 3 eggs
  • 1/2 tablespoon cajun seasoning
  • 1/4 cup all-purpose flour
  • Vegetable, canola, coconut, or grapeseed oil

Don't have a Cajun seasoning? Combine salt, pepper, paprika, onion flakes, cayenne, oregano, and thyme.

1. Separate the yolks and egg whites. Beat the egg yolks.

2. With a whisk or electric beater, beat the egg whites.

Note: Using a whisk takes a lot of elbow grease. It'll be much easier with an electric beater.

3. Keep beating the egg whites turn foamy. It should form soft peaks.

4. Mix everything but the egg whites in a big bowl.

5. Add the egg whites. It'll look like a big gloppy mess right now, but all will be well. Promise.

6. Add large spoonfuls to a greased pan over medium heat. Fry until both sides are golden brown.

7. Serve warm with sour cream, honey mustard, or cilantro lime sauce. You can even whip up a healthy option with yogurt and herbs.

Obviously, these corn fritters can be eaten whenever you'd like. It doesn't need to be Mardi Gras. Trust me, you'll want them all year round.
