- Aluminum: Aluminum is a popular option for brownie pans since it’s a relatively lightweight metal that conducts heat quickly, but know that aluminum should not be used with highly acidic foods — like tomatoes and vinegar — and it’s possible for trace amounts of aluminum to leach into your food, though minimally. Cast aluminum, specifically, is created when molten aluminum is poured into a mold, and because of that process, it tends to be more durable and less likely to react with food. It is also dishwasher safe and scratch resistant.
