After a long day at work the last thing I want to do is cook, and I don’t think that’s a controversial statement. Lazy dinners are a recipe category of their own, after all. But the bummer of most of these quick and easy meals (i.e. from-a-box pasta and frozen pizza) is that vegetables rarely ever fit into the equation. Until now, that is.

I know, I know: It sounds too good to be true, but it is.

Unlike other meal delivery services, Mosaic’s meals require zero prep work which, if you’re not exactly a whiz in the kitchen (like me), then this will be a total game-changer. How Mosaic Works

First, I went to their website where I was prompted to enter my zip code — this is just to make sure they delivered to my area. After that, a menu popped up with tons of options to choose from.

The menu contains breakfast, lunch, and dinner options with both single-serving and family-size meals available, all arriving frozen to lock in freshness and flavor.

I opted for a bit of everything from the menu, so let’s break it down, shall we?

My box contained the following meals: Peanut Tofu Bowl, Veggie Pot Pie, Curried Lentil Soup, Mac & Greens, Broccoli Cheddar Mac, Tomato, Rosemary and White Bean Soup, Brussels & Squash Harvest Bowl, Tangy Thai Stir Fry, BBQ “Meatloaf” & Sweet Potato Mash, Butter Squash & Sage Pasta, and Yellow Dal Curry.

I mean, come on with that variety! And, to make things even better, none of the meals contain any artificial ingredients or preservatives.

Following the meals, I picked my plan. I opted for every four weeks, but there was the option to choose from every week, every two weeks, and every three weeks.

Finally, I set my first delivery date, entered my payment information, and it was all set. The entire process took me all of 10 minutes to complete.

Making The Meals

As I mentioned, the hand-cooked meals arrive already prepared, so all I had to do was toss them in the microwave or oven. Most are ready to eat in under five minutes — a time-saving blessing.

I tried the Veggie Pot Pie (family style) and shared it among my relatives. I just popped it into the oven, followed the instructions, and it was ready to enjoy a few minutes later. In terms of taste, I’m happy to report that I — a pot pie enthusiast — was thoroughly impressed. The crust was perfectly flaky, the vegetables were soft, and the sauce was just the right consistency. I could tell that there were all-natural ingredients and none of the other nonsense typically found in frozen meals.

In addition, I devoured the Peanut Tofu Bowl the next day and that was just as flavorful. I can’t say I have an adventurous palate, but it had me wanting seconds (and maybe even thirds). It had just the right tofu-to-coconut-peanut-sauce ratio and, while that may not be an exact science, it understood the assignment. Delish.

Mosaic Foods is the ultimate meal delivery service for those who don’t want to deal with the hassle of shopping, preparing, cooking, and cleaning. And let’s be honest, that’s, like, everyone.

I’ve tried other meal kits, but this one steals the show. As someone who doesn’t have the time, patience, or skillset to cook, the fact that I could toss a meal into the oven while I get caught up on some work was beyond convenient.
